"Remington Steele" was an MTM produced television show that ran on NBC-TV from 1982 until 1987. It starred Stephanie Zimbalist as Laura Holt and Pierce Brosnan as Remington Steele.
What was the premise or idea behind the series? Why wasn't Remington Steele REALLY Remington Steele? And why was Laura Holt in charge of things?

The answer to this one can be found in the opening voiceover for the series's first season (spoken by Stephanie Zimbalist as Laura Holt):
"Try this for a deep, dark secret. The great detective Remington Steele? He doesn't exist. I invented him. Follow: I always loved excitement, so I studied and apprenticed, and put my name on an office. But absolutely nobody knocked down my door. A female private investigator seemed so . . . feminine. So I invented a superior. A decidedly masculine superior. Suddenly, there were cases around the block. It was working like a charm. Until the day he walked in, with his blue eyes and mysterious past. And before I knew it, he assumed Remington Steele's identity. Now I do the work and he takes the bows. It's a dangerous way to live, but as long as people buy it, I can get the job done. We never mix business with pleasure. Well, almost never. I don't even know his real name."
Laura needed something to draw people to her agency, so she "invented" Remington Steele, never dreaming that a conman would someday step into those shoes. Since it was, technically, still Laura's agency, and she had the training as a private eye, she was in charge.

We never really know exactly WHO he is. It's never explained. We know that he's a charming con man and thief, but as for a name- he's used many of those in his life, and apparently even he's not sure what his name really is.
What happened to Murphy and the secretary before Mildred?

This question is answered in the first second season episode "Steele Away with Me". Laura and Steele tell IRS agent Mildred Krebs that Murphy left to start his own agency in Denver, Colorado. Bernice Fox ran off with a saxophone player and married him.
In reality, the show was retooled after that first season for some reason, and it was decided that Murphy and Bernice had to go, and they brought in Mildred Krebs.

Not mainstream published works, no. There have been a couple of fan novels published privately, however. Sometimes, if you're lucky, you can find them at eBay or at fan conventions.
in"STEELE TRYING" what is the name of the song being sung by Tony Bennett while Laura and Remington are on the dance floor?

In the original version, the song is, I believe, "While We're Young". It was changed for the DVD verson, as were many of the songs.
