Speaking as someone who spent over 12 years as a Head Chef Manager in a not dissimilar establishment I can assure that if a new venue is so intransigent on it's opening week/month then they have absolutely no chance of succeeding whatsoever. One must bend over backwards to accommodate the needs and wishes of potential repeat visitors, nothing should be too much trouble. These guys obviously have ideas above their station. Philip perhaps you could make them aware of this chain of posts.
